Another classic from Il Ceo, this sparkling rosé of mainly Pinot Noir and some Merlot is sourced from young vines planted on basalt rich in iron. The grapes are pressed slowly and fermented separately in fibreglass. After six months, the wines are blended and refermented in bottle with the addition of grape juice. As usual, this is a frizzante full of charm, displaying a pale salmon hue in the glass, delicate bubbles and refreshing flavours of crunchy red berries and citrus.
