Colline Bresciane

Based in the Parco delle Colline di Brescia, just northwest of the city in eastern Lombardia, Mattia Corbellini run the Azienda Agricola Cherubini since 2010.

Growing up in the family restaurant, Mattia had the chance to taste several expressions of the local Classic Method ‘Franciacorta’. After leaving the hospitality, and a couple of years abroad, he returned home to start his winery. First, he rented a 2.2 hectares vineyard planted in the late 90s on limestone clay soil, surrounded by untouched hills and blessed by thermal excursions between day and night. Then, with meticulous farming and a personal interpretation of winemaking, without following the restriction imposed by the Franciacorta DOCG disciplinary, he started the production of his distinctive sparkling wines.

All the wines ferment with indigenous yeasts in concrete tanks until winter, before being transferred to a mix of new and old barriques for six months. During our visit last April, Mattia led us through a tasting of the still wines. First impressed by the purity of fruit in the current vintage, we were blown away by the complexity of the reserve wines, assembled in a solera system over the last ten years and aged under flor.

After resting on the lees, Mattia disgorges every single bottle by hand, topping up with the still wine from the same vintage and no dosage.
