We are excited to present the latest release of sparkling wines from Mattia Corbellini of Cherubini.
Comes from a family of restaurateurs, Mattia is farming two hectares of vines in an enchanting valley within the Parco delle Colline di Brescia in eastern Lombardy, on the border of the Franciacorta production area. Chardonnay and Pinot Noir are planted on soils of millenary formation, composed of rocks rich in limestone with a clayey substrate. Employing chemical-free farming practices and a personal interpretation of winemaking, Mattia bypasses the restrictions imposed by the Franciacorta DOCG regulations, becoming one of the most original producers in this area.
All the wines ferment with indigenous yeasts in concrete tanks, before being transferred to a mix of new and old barriques for a few months before bottling. The incredibly complex reserve wines are the fruit of a solera system assembled over a decade, aged under a flor layer in old barriques. After resting on the lees, Mattia disgorges every bottle by hand, topping up with the still wine from the same vintage and no dosage.
Alongside the pristine Sui Generis 2019, made from direct pressed Chardonnay, and the luxurious Pinot Noir rosè Levis, for the first time we have received the Subsidium Riserva. A blend of direct pressed Pinot Noir and Chardonnay, added with fifteen per cent of reserve wines and aged on the lees for five years, the highlight of our visit to Mattia last summer.
