Trebbiano di Spagna, or Trebbianina, is a rare variety farmed by a few growers in the Modena area. The vine tends to produce sparse clusters and small berries, with consequent low yield but sensational flavour profile. After being destemmed, the grapes were gently pressed and fermented in stainless steel. Added with some grape must and bottled in the following spring for the second fermentation, the result is a sunny wine that sings notes of wildflowers, ripe lemons and spices. With great structure tamed by graceful bubbles and vibrant acidity, this is unmissable for all Claudio aficionados.
