Trebbiano Modenese and Trebbiano di Spagna from a single plot planted on silty soil. Trebbiano di Spagna is a high-acid, aromatic grape variety almost abandoned for its low yield. The grapes are directly pressed and co-fermented in concrete before the second fermentation in the bottle. Arguably our favourite vintage of this savoury and complex sparkling wine. Displaying notes of citrus, melon, almond and spice, the fine bubbles and the saline length bring a lively texture to the wine.
